ARUGULA WITH ORANGE BALSAMIC DRESSING:

1 bunch arugula
1 orange to yield 1/4 teaspoon grated rind and 1 1/2 teaspoons orange juice
1 tablespoon balsamic vinegar 1 tablespoon extra-virgin olive oil

1. Remove stems from arugula and wash well. Dry. 

2. Grate orange rind. 

3. In serving bowl whisk the vinegar, orange juice, oil and rind. 

4. Dress arugula.

Yield: 2 servings.
