Caesar salad

The basic ingredients (and these may vary from one recipe to another & should be adjusted to taste) are as follows:

1 clove of garlic

1 Tablespoon of anchovy paste

1/3 cup extra virgin olive oil

1 teaspoon Worcestershire sauce

½ teaspoon of salt

1 teaspoon Dijon mustard

½ teaspoon, black pepper

1 lemon wedge

1 Tablespoon white wine vinegar (or balsamic)

1/3 cup grated Parmesan cheese

1 large or two small bunches of Romaine lettuce

1 cup garlic flavored croutons or Caesar style croutons

Rub a large wooden bowl with the cut clove of garlic, allowing small pieces to remain in the bowl. Add to the bowl the anchovy paste, oil, Worcestershire sauce, salt, mustard, pepper, and vinegar. Mix well with a whisk or spatula. Break lettuce into small pieces and add to bowl. Toss with dressing. Squeeze lemon wedge over lettuce. Add cheese and croutons. Serve as is or topped with cooked chicken, shrimp or beef.
