SALMON SUPREME CASSEROLE 

This creamy casserole is perfect on a warm evening, accompanied by a
green salad. The ingredients are simple, but they perfectly complement
the flavor of the salmon. Serves 6. Per serving: 201 cal, 6.1 g fat,
46 mg cholesterol, 12.9 g carbohydrates, .9 g fiber, 22.3 g protein,
604 mg sodium.

1 16-oz can salmon, drained and flaked
1 cup macaroni, cooked and drained
1 cup low-fat cottage cheese
1 cup light sour cream
1 small onion, minced
2 tbsp parsley, chopped fine, or 1/2 tsp dillweed
Salt and pepper, to taste
2 tbsp dried bread or cracker crumbs

Preheat oven to 350 degrees. Combine all ingredients; mix well. Place
in 2-qt casserole dish. Top with crumbs. Bake 35-40 minutes.
