BARBECUE SAUCE
Makes about 3 cups. This somewhat sweet sauce is delicious with pork chops, ribs, or steaks. Note that the zest of the lemon is the outer, yellow part of the rind; don't use the inner, white part, which is bitter.
1 med onion, minced 1 clove garlic, minced 1/2 cup butter Juice of 1/2 lemon Zest of 1 lemon, chopped fine 1 cup brown sugar 1/2 cup vinegar 1/2 cup water 1 cup catsup 2 tbsp Worcestershire sauce 1 tsp Tabasco sauce 1/2 tsp chili powder
Combine onion, garlic, and butter in a skillet. Cook over medium-low heat until slightly brown.
Combine remaining ingredients; add to butter mixture. Heat sauce until it steams; do not boil.
