PESTO SAUCE 2 cups firmly packed fresh basil, 2 cloves of fresh garlic, 3/4 cup of extra virgin olive oil, 3/4 cup of parmesan cheese, 1 TBLS pine nuts. Place ingredients in a blender and blend well. Adjust amount of basil and oil to form a thick paste. Season with salt and pepper to taste. Serve over choice of pasta - something that will hold the sauce well - penne, gnocchi, fettuccini, etc. (spoon sauce over warm pasta.) |
